Maghali Qvevri Shala - 2021 - from Chikhradze's Family Vinayrds - produced using “Qvevri method.” A Qvevri is a uniquely Georgian creation, a large subterranean clay jar, in which wines are fermented and matured on both skins and stems. This gives Qvevri wines a dimension of flavour and aroma not found in other wines.

Grape variety: Shala received a special status for its place of origin. Translated as Asureti black is the oldest grape variety which considered extinct in the 19Th century but was saved by German colonist. Asureti is one of the settlements in Georgia, which were build by settlers from Germany in the 19th century. The vine for this grape was found in the forest by farmer Otto Shalm, who began to cultivate it. Later a small winery appeared in the village, which existed in the first years of Soviet ruse and was assigned to the Success collective farm.

Fermentation: The wine is produced using the traditional Georgian “Qvevri Method”. Grape juice and skins are fully fermented and macerated for 6 months in Qvevri (clay vessel buried into the ground) that gives the wine deep and full tannin taste and structure. The wine is extracted and bottled without filtering, preserving all the raw flavors.
