Ajika is a hot and spicy sauce from Samegrelo and Abkhazia regions of Georgia. It is made with green paprika, hot green peppers, garlic, herbs and spices. In appearance and consistency Ajika resembles Italian green pesto and is used to flavour meat and fish dishes.
